Four Meat Chili

I came up with this one for the Delval Cookoff at Gloucester County College in April ‘08.

1 – 1.5lb package of meat loaf mix (veal, pork, ground beef)

1 package ground lamb

2 green pepper diced fine

1 vidalia onion, diced fine

2 jalapeno peppers, chopped

2 chipotle peppers in adobo

1 28 oz can of dark red kidney beans

1 15oz can black beans

1 can of corn

2 cans of Rotel tomatoes

1 4oz can tomato paste

1/2 cup dark chili powder

2 tablespoons cumin

1/2 tablespoon cayenne

1 beer

 

Brown the meats and drain off the grease.  Combine all ingrediants in a crock pot (I think it’s better if cooked slow) and cook on high for 3-4 hours stirring about once an hour.  then switch to low for 2-3 hours.
