Burning Orbit Chili

My friends have been trying to get this recipe out of me for years.  I’ve used it for parties and competitions but I’ve since toned down the competition chili…………so I can let the cat out of the bag.  It’s not eatin’ if you ain’t sweatin’!  

 

1.5 lbs. hot Italian sausage

1.5 lbs ground beef

2 med bell peppers, rough chopped

1 med spanish onion, diced

1 15-oz can of corn

2 15-oz cans of Rotel tomatos

2 fresh jalapenos, diced

3 Goya chipotle peppers in adobo

1 6-oz tomato paste

1 beer (Use good beer. Yeungling, Coors X-Gold, Coors Reg.  NO light beer)

¾ cup dark chili powder

2 tbsp Cayenne powder

4 tbsp cumin

1 tbsp Paprika 

1/2 eyedropper of Pure Cap (or not)

2 15-oz cans of dark red kidney beans

1 15-oz can of black beans

Masa Harina (if necessary) 

 

Recipe is for cooking in a crock pot.  Stove top might need more liquid.

 

Remove sausage from casing.  Lightly brown beef and sausage.  Drain off grease.  Bust up big meat chunks.  Chop up peppers and onion.  Put everything into a crock pot and cook on high for 4-6 hours.  Make sure you stir the pot.  If chili is a little thin, sprinkle a small amout of masa harina across the top of the crock pot, stir in, and wait for the chili to thicken.  Repeat if necessary.
